Lent and Baked Tilapia

Ash Wednesday was yesterday, and as a Catholic (and for a lot of other Christian religions), that marks the beginning of Lent. Normally each year I "give something up" that I enjoy, but this year, I decided to "take something up." I'm going to focus on praying every day, whether just prayers or the rosary, and the husband and I are going to go to church every Sunday during Lent and hopefully get in the habit of going more in general.

So, being Ash Wednesday, Catholics fast as well as abstain from meat (except fish). Well, I fasted as much as I could, but whoever came up with fasting probably wasn't a distance runner because after my long-ish run, I was famished. I ended up having two small meals, and a hearty dinner.

For dinner, I made this baked tilapia recipe that I got from a friend. I didn't have any green onions, so I left those out, and I added a few nuts. It was so tasty! The husband even had two pieces!

I also made some easy green beans: threw two cans of cut, low sodium green beans in the microwave for 3 minutes. I then topped them with some parmesan cheese, a few bread crumbs and tossed them in the oven with the fish for about 10 minutes. They turned out pretty well. And the rice is Uncle Ben's Garden Vegetable Ready Rice. I love that stuff.

Uncle Ben's Ready Rice is awesomeeee. Used the jasmine rice last night with my red thai curry chicken & veggies.

I'll have to try that recipe. It seems like during Lent, when Fridays roll around, I have a hard time coming up with a meatless meal. Good for you for taking up something -- I did that last year and it was great! It really helps you to grow spiritually.

I am going to try this recipe tonight! I love tilapia and I'm always looking for new ways to make it. That green bean recipe is great too! My hubby always says that ours sides are bland so I might just have to make those too!

What a GREAT idea to do for lent...I've been thinking a lot about praying every day lately, and was just thinking this morning about not spending enough time talking to God. Thanks for helping motivate me :)

our Priest yesterday encouraged us to TAKE UP something, just like you are - great idea! I tried fasting yesterday and it just made me sick UGH. This is my first lent season - I'm joining the church at easter. Good luck!!!

Whoops! I totally forgot it was Ash Wednesday yesterday until I was on my way to Yoga and drove by a church with a packed parking lot! By then, the damage had already been done: three full meals and bacon with dinner. Ugh.

Good luck with the prayer! I think it's an admirable goal for Lent -- one I took up two years ago. You'll learn a lot I think.

I really appreciate and admire that you cook 6 out of 7 nights a week. And in your recent "re-intro" post, you said that you have a passion for cooking.

I've been following you for awhile and see that you post easy recipes (I'd love to see some of your more challenging dishes) and that you always comment on how you like them. I'd really like to know more about WHY you like them. Rather than "it was tasty" or "I enjoyed it more than I thought", it would be helpful to know why. What flavors did you enjoy or not enjoy? Have you made similar recipes that are better - and WHY are they better. Hearing something is "good" isn't inspiring to me, but to hear something like "I think the balance of the sauce was perfect and I really could taste the {specific flavor}", would be helpful!

I'll definitely try to include more useful information. I guess I'm just so excited that I'm cooking much more often that I haven't bothered trying to explain any of them in detail. I just snap a picture and post the recipe.

And PS-- I'm working my way into more challenging dishes. Slowly, but surely :). I'll post them as I make them.

I cook often and sometimes get in just "throw something quick together" ruts. I like to test myself. I would recommend trying out more fresh veggies and finding the best way to cook them. Cans/frozen are easy but nothing tastes like fresh! Also, a surprisingly "easy" challenge is roasting a whole chicken.
