I got a little crazy and bought some pork tenderloin at the grocery the other day. I also bought a pear (keeping up with my "cook with new foods" trend), so I made this cheese and pear pork tenderloin recipe from Cooking Light.
I was in a hurry, so I didn't cut the pork and stuff it like the recipe calls for. I just split it in half and filled it with the topping/mixture and let the rest fall around the pork in the dish. Turns out I like cooked pears. Especially combined with cheese, bread crumbs and shallots. The pork tenderloin was pre-prepared with peppercorn, which gave it a good kick, and then the pear/cheese mixture added something sweet. I'd buy the peppercorn tenderloin if you decide to make this. Delish.
